Spiralized Apples (Apple Pasta?!) w/ Stovetop Granola!

I tryyyy [really hard] to keep a clean kitchen counter. (I mean, I also try to make my bed every day.) (And put away my clothes immediately.) You can’t win ’em all…

But part of keeping a clean kitchen counter is putting my shiz away on a regular basis. And the problem with that, although it’s obviously great to have said clean kitchen counter, is that I forget about stuff. Out of sight, out of mind…ya know?

Well, sadly, my spiralizer (sorry bud), had fallen into that “out of sight, out of mind” category. Once I realized that I was totally ignoring one of my most magical kitchen tools (read more about the super spiralizer here), I decided to dust it off and keep it proudly displayed on my counter.

So now, when I’m in my kitchen, there’s my veggie-noodle-maker, staring me in the face screaming: “SPIN ME! SPIN ME! SPIN ME!”

So fine! I spun him! And this time, instead of turning zucchini into zoodles (huh?! learn more about zucchini noodles here), I spun an APPLE! For breakfast! Because why the freakin’ heck not?!?!

Turns out, this spiralized apple was stupendous!!

And the stove-top granola I threw on top (in addition to some coconut yogurt) was extra EXTRA stupendous!

AAAAAND the fact that making this breakfast took me, umm, 5 minutes? Maybe 6 or 7 at most?  Yeah – bonus-ly stupendous.

Here’s how you can make this bangin’ apple pasta breakfast, too:

Spiralized Apples (Apple Pasta?!) w/ Stovetop Granola!

Ingredients
  • 1 apple
  • 3 tbsp nuts or seeds of choice (optional)
  • ¼ cup rolled oats
  • 3 tbsp raisins or other fav dried fruit
  • 1 tbsp coconut sugar
  • coconut oil spray (or just 2 tsp coconut oil)
  • cinnamon, to taste
  • coconut yogurt, to taste
Instructions
  1. Grab your apple, wash it, and pluck out the stem.
  2. Using your super-cool SPIRALIZER (learn more here), pop your apple in place. (If you watch this video, you'll know what to do.) Play around with blades to find the one that makes the shape you desire! I used the blade that looks like this:

  6. So, SPIRALIZE YOUR APPLE! Turn it into apple pasta!
  7. Then, in a pan on the stove over medium/low heat, spritz a generous amount of coconut oil (or add your 2 tsp of it).
  8. Pop your nuts on the pan and toast them up for about 1-2 minutes, then add the rolled oats, dried fruit and coconut sugar and mix everything together on the heat for another 2-3 minutes.
  9. Plop a generous amount of coconut yogurt on top of your apple pasta, then dump on the stovetop granola, sprinkle on as much cinnamon as you desire and BOOM! Apple pasta breakfast bowl!!
